Glubbel Cheesecake

This beautiful glühwein-flavored cheesecake with a gingerbread base is the perfect dessert for Christmas celebrations. Serve with Glubbel Sparkling Glühwein.

This gorgeous cheesecake takes some time to prepare so make sure to make the cake the day before it is to be served so it has enough time to set in the fridge.

Preparing the base

Ingredients:

  • 75 g gingerbread cookies

  • 75 g Digestive biscuits

  • 50 g butter

Instructions:

  1. Crush the cookies into small crumbs e.g., in a blender. Melt the butter and mix it with the cookie crumbs

  2. Place baking paper at the bottom of a springform pan (⌀ 24cm) and press the cookie mixture evenly onto the bottom of the pan. Place the pan in the fridge.

Making the filling

Ingredients:

  • 5 gelatin leaves

  • 2 dl cream

  • 200 g unflavored cream cheese

  • 1 dl powdered sugar

  • 1 tsp cinnamon

  • 1 tsp cardamom

  • Grated peel of ½ orange

  • ¾ dl Glubbel sparkling glühwein

Instructions:

  1. Place the gelatin leaves in cold water and let them soak for at least 10 minutes.

  2. Whip the cream. Mix the powdered sugar, spices, and grated orange peel into the cream cheese. Add the whipped cream into the cream cheese mixture and mix gently.

  3. Heat the glühwein. Squeeze the excess water from the gelatin leaves and let them dissolve into the glühwein. Allow the mixture to cool and then pour into the cream cheese mixture while stirring.

  4. Pour the filling evenly onto the cake base. Cover the cake and allow to set for at least 4 hours in the refrigerator.

Making the glaze

Ingredients:

  • 3 gelatin leaves

  • ½ dl strawberry or blueberry juice

  • 1 dl Glubbel sparkling glühwein

Instructions:

  1. Place the gelatin leaves in cold water and let them soak for at least 10 minutes.

  2. Boil the juice in a pot. Squeeze the excess water from the gelatin leaves and let dissolve into the hot juice. Pour the juice and gelatin mixture slowly into the Glubbel sparkling glühwein while stirring. Allow the mixture to cool for a while in the refrigerator stirring occasionally (the mixture should be as cold as possible but not yet set before adding it on top of the cake).

  3. Carefully pour the glaze over the cake and put the cake in the fridge to set for at least 2 hours or preferably overnight.

Decorating the cake

Ingredients:

  • meringue

  • small candy canes

  • figs

  • sprigs of rosemary

  • blueberries

Instructions:

  1. Decorate the Glubbel cheesecake by first adding crushed meringue on one side of the cake. Add further decorations such as fig slices, rosemary sprigs, berries, and candy canes.
